La parcelle Saburin Sud est située à mi pente de l’un des coteaux les plus abrupts du cru Brouilly. Les sols sont composés de granits roses. « Saburin » veut dire savoureux en vieux français ! La nature a bien commencé les choses et la main de l’homme les a peaufinées avec un élevage de 13 mois en fût de chêne qui a complété sa structure avec notamment des notes épicées.
